ArcAqua brings the power of ozone to the fish processing industry where the presence of high microbial counts often contaminates fresh fish.

Without altering their existing procedure in any way, our customers have been able to double the shelf-life of their products. In some cases this meant an 8-day shelf-life extension when ozone was introduced into the process.

ArcAqua’s EFFICACY ON SHELF-LIFE (PREPARED FISH)
Normal Chilling

Fish samples were tested with ArcAqua’s ozone to evaluate the effect of ozone on shelf-life. Haddock fillets, haddock mornay, lightly smoked snoek, angelfish and salmon were prepared and cleaned using ArcAqua’s ozone. The sample fish were packed and sent to a normal chiller. The control samples were prepared in the same manner but were not treated with ArcAqua’s ozone. When ArcAqua treated samples were tested for normal chilling; the shelf-life of haddock fillets increased by 6 days, lightly smoked snoek extended with 8 extra days, while angelfish and salmon both gained 7 extra days.

DEEP Chilling

Fish samples were tested with ArcAqua’s ozone unit to evaluate the effect of ozone on shelf-life. Haddock fillets, lightly smoked snoek, angelfish and salmon were prepared and cleaned using ArcAqua’s ozone. The sample fish were packed and sent to a deep chiller. The control samples were prepared in the same manner but were not treated with ArcAqua’s ozone. When ArcAqua treated samples were tested for deep chilling; haddock fillets gained 3 extra days, the shelf-life for lightly smoked snoek increased by 6 days, while angelfish and salmon both gained 5 extra days.

Post-harvest losses in developed countries average 12% from production to retail warehouse, with an additional 20% loss at retail stores and food sites. During citrus trials, ArcAqua ozone significantly reduced the microbial load on fresh produce, resulting in less spoilage.
